This Tasty Little Salad is a powerhouse. It’s got a base of richly flavored greens, a whole bunch of cilantro, extra firm tofu and a quick no-measure dressing. I whipped this together after returning hungry from a hike with a friend. It was done and in my bowl in ten minutes. This uses boldly flavored greens, but you can substitute something milder, such as cabbage or bok choy if you choose. Enjoy!

Tofu & Greens TLS
1/2 head radicchio, sliced thin
1 bunch lacinato kale, sliced thin
1 bunch cilantro, chopped
3/4 cup roasted salted peanuts
1 LB extra firm tofu, drained and cut into bite size pieces
tamari
ponzu
toasted sesame oil
lemon or lime juice
Mix together all the salad ingredients in a large bowl. Dress with your preferred amounts of the dressing ingredients. How much to put add is up to you! But for those who feel nervous about free pouring, start with 2 TB each of the tamari, ponzu and toasted sesame oil. Mix together, taste, then add some lemon or lime juice to add brightness. Add more if needed.
