Citrus Mint Smoothie

Here’s just the thing for a pick me up – a tangy, bright, fresh smoothie made with tangerine, spinach and mint.

While I usually eat my greens and fruit, today was hectic and I wanted something to enjoy while on the go. Using my Vitamix, I blended some delightful baby spinach with whole tangerine, lime juice, ice, water and stevia. It was just what I needed! Enjoy!

Citrus Mint Smoothie

  • Two cups fresh spinach
  • One large or two small tangerines, peeled
  • Five ice cubes
  • Stevia, or sweetener or your choice, to taste
  • Four fresh mint leaves
  • Water – about a cup

Blend all ingredients in a blender until smooth. Enjoy!
